A quick and flavorful sheet pan dinner featuring tender steak and crisp zucchini, perfect for a healthy weeknight meal.

1.5lbsirloin steak, sliced against the grain
Vegetables
3-4mediumzucchini, sliced in half moon
0.25teaspooncrushed red pepper flakes, optional
to tasteSalt and fresh cracked black pepper
0.5cuplow-sodium soy sauce (or coconut amino)
1teaspoongarlic powder
2tablespoonsSriracha sauce (or hot chili sauce)
0.5lemonjuice of 1/2 lemon
1teaspoonfresh oregano
0.25cupolive oil
0.25cupchopped parsley, for garnish
Instructions
Mix soy sauce, garlic powder, olive oil, and hot sauce to make marinade. Marinate steak for 30-60 minutes. Toss zucchini with salt, pepper, oregano, lemon juice, and olive oil.
Preheat oven to 520°F (270°C) on grill or broiler mode. Line a baking sheet with parchment paper.
Arrange steak and zucchini on the sheet, season with salt and pepper, then bake for 5-10 minutes until zucchini is crisp-tender and steak is cooked through.
Simmer remaining marinade in a small saucepan to use as a drizzle.
Drizzle cooked marinade over steak and zucchini, garnish with parsley and red pepper flakes, then serve immediately.
