Ingredients

Protein

  • 1.5 pounds boneless, skinless chicken breasts (cut into thin strips)
  • 1 red bell pepper red bell pepper (cut into strips)
  • 1 yellow bell pepper yellow bell pepper (cut into strips)
  • 1 orange bell pepper orange bell pepper (cut into strips)
  • 1 red onion red onion (cut into wedges)
  • 3 cloves garlic (minced)
  • 3 tablespoons olive oil
  • 0.25 cup fresh cilantro (chopped)
  • 2 tablespoons lime juice (freshly squeezed)
  • 6 8-inch flour or corn tortillas (warmed)
  • 2 teaspoons chili powder
  • 2 teaspoons ground cumin
  • 2 teaspoons dried oregano
  • 1 teaspoon smoked paprika

Instructions 

  • Slice chicken and vegetables into strips for even roasting.
  • Mix spices, salt, and pepper; coat chicken and veggies with oil and spice mixture.
  • Roast at 425°F (220°C) for 15–20 minutes until cooked and slightly charred.
  • Finish by squeezing lime juice and sprinkling cilantro over the roasted mixture. Serve with warm tortillas.

Notes

For extra flavor, marinate the chicken with spices and lime juice for 30 minutes before roasting.
