A delicious and easy sheet pan meal combining flavorful BBQ chicken, roasted potatoes, and fresh green beans for a satisfying dinner.

Ingredients

Spice Mix

  • 2 tablespoons brown sugar
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon chili powder
  • 1 teaspoon salt
  • 1 2 teaspoons black pepper
  • ¼ teaspoon red pepper flakes
  • ½ teaspoon cumin
  • 6 pieces boneless skinless chicken thighs (about 2 lbs)
  • 4 tablespoons olive oil (divided)
  • ½ pounds baby potatoes (cut in half or quartered if large)
  • 1 packet French onion soup mix
  • 1 cup BBQ sauce
  • 3 cups fresh green beans (trimmed)

Instructions 

  • Preheat oven to 425°F (220°C) and line a baking sheet with foil.
  • Mix brown sugar, paprika, garlic powder, onion powder, chili powder, salt, pepper, red pepper flakes, and cumin.
  • Toss chicken thighs with 1 tbsp olive oil and spice mixture; place on one side of the sheet.
  • Toss potatoes with remaining olive oil, French onion soup mix; spread on the other side of the sheet. Bake 20 minutes.
  • Add green beans to potatoes, stir gently, spread BBQ sauce over chicken, and bake 15-20 minutes until internal temp reaches 165°F (74°C).

Notes

Ensure chicken reaches an internal temperature of 165°F for safety.
