Ingredients

Tart Shell

  • 15 ounces pumpkin puree
  • 14 ounces sweetened condensed milk
  • 2 large eggs
  • 1.5 teaspoons ground cinnamon
  • 0.5 teaspoon ground ginger
  • 0.25 teaspoon ground cloves
  • 0.25 teaspoon cardamom (optional)
  • 0.125 teaspoon ground nutmeg
  • 0.5 teaspoon salt
  • 1.5 teaspoons vanilla extract
  • 1 tablespoon butter (salted)
  • 1 cup pecans (finely chopped)
  • 3 tablespoons brown sugar (packed)
  • 1 tablespoon maple syrup
  • 1 teaspoon vanilla extract
  • 0.125 teaspoon salt
  • 1 tablespoon granulated or cane sugar

Flaky sea salt (optional)

Instructions 

  • Pre-bake the tart shell according to recipe instructions and set aside.
  • Mix pumpkin puree, sweetened condensed milk, eggs, spices, vanilla, and salt until smooth.
  • Pour filling into the pre-baked tart shell and bake at 350°F (175°C) for 40 minutes.
  • While baking, prepare praline topping by melting butter, adding pecans, brown sugar, maple syrup, vanilla, and salt; cook until caramelized.
  • Spread praline topping over the cooled tart and sprinkle with flaky sea salt if desired.

Notes

For extra flavor, use high-quality sea salt and fresh spices.
