  • 2 medium Zucchini (Scoop out excess seeds if large.)

Dairy

  • 1 cup Shredded Mozzarella Cheese (Can substitute with cheddar or dairy-free cheese.)

Sauce

  • 1 cup Tomato Sauce (Opt for low-sugar or homemade sauce.)

Other

  • 1 medium Onion (Diced; can replace with shallots.)
  • 3 cloves Garlic (Minced.)
  • 1 tablespoon Italian Seasoning (Or substitute with individual herbs.)
  • 1 teaspoon Salt (Adjust to taste.)
  • 1 teaspoon Black Pepper (Can be omitted for a milder dish.)
  • 2 tablespoons Olive Oil (Or substitute with any neutral oil.)

Instructions 

  • Preheat oven to 375°F (190°C).
  • Cook ground beef with diced onion and minced garlic until browned.
  • Slice zucchini and layer in a baking dish, then top with cooked beef mixture, tomato sauce, and shredded cheese.
  • Sprinkle Italian seasoning, salt, and pepper over the top.
  • Bake for 25-30 minutes until cheese is melted and bubbly.

Notes

For a lower sodium version, reduce added salt and use low-sodium tomato sauce.
