Instructions
Make the salted caramel: Heat sugar over medium, stir until golden, add butter, cream, vanilla, and salt; simmer briefly, then set aside.
Cook apples: Sauté apples with cinnamon in butter until soft, then add maple syrup and set aside.
Prepare granola: Toast oats and pecans in a dry skillet until fragrant, then coat with melted butter and maple syrup.
Whip cream: Beat heavy cream until thick, fold in vanilla.
Assemble parfaits: Layer caramel, apples, granola, and whipped cream in glasses; repeat layers and drizzle with caramel before serving.
