A vibrant and flavorful dish combining perfectly cooked salmon with a fresh, tangy mango salsa for a delightful meal.

Ingredients

Sauces and Sweeteners

  • 2 tablespoons soy sauce or coconut aminos
  • 1 tablespoon maple syrup or brown sugar

Cooking Oil and Juices

  • 2 tablespoons olive oil
  • 2 tablespoons lime juice (approximately the juice of one lime)

Garlic and Seasonings

  • 2 cloves garlic (crushed or 1 teaspoon garlic powder)
  • 0.5 teaspoon kosher salt
  • 2 teaspoons Tajin seasoning
  • 1 teaspoon paprika
  • 1 teaspoon chili powder

Salmon and Vegetables

  • 4 fillets salmon fillets (each 4-6 ounces)
  • 1 large avocado (pitted and diced)
  • 1 large mango (diced)
  • 0.5 red bell pepper diced small
  • 2 tablespoons finely chopped cilantro
  • 0.5 jalapeño seeded and minced
  • 0.25 cup finely diced red onion
  • 2 tablespoons fresh lime juice (approximately the juice of one lime)
  • 0.5 teaspoon kosher salt (with additional salt to taste)

Instructions 

  • Mix soy sauce, maple syrup, lime juice, garlic, salt, Tajin, paprika, and chili powder in a small bowl.
  • Brush salmon fillets with the marinade and let sit for 10 minutes.
  • Cook salmon in a skillet over medium heat for 4-5 minutes per side until cooked through.
  • Prepare mango salsa by combining diced mango, avocado, red bell pepper, red onion, cilantro, jalapeño, lime juice, and salt.
  • Serve salmon topped with mango salsa.

Notes

For extra flavor, marinate the salmon longer or add a squeeze of fresh lime before serving.
