Instructions
Preheat oven to 350°F (175°C). Toss strawberries with 2-3 tsp maple syrup and roast for 15-20 minutes.
Mix oats, shredded coconut, cocoa powder, cinnamon, and salt in a bowl. Add melted coconut oil, maple syrup, and vanilla; stir well.
Spread granola mixture on a baking sheet and bake at 350°F (175°C) for 15 minutes, stirring halfway.
Assemble bowls with Greek yogurt, roasted strawberries, chocolate granola, and blueberries. Drizzle with additional maple syrup if desired.
Notes
Store leftover granola in an airtight container for up to a week.
