A delicious and nutritious breakfast featuring roasted strawberries, creamy Greek yogurt, and crunchy chocolate granola.

Ingredients

Fruits

  • 2 lbs strawberries (hulled and halved)
  • 1/4 cup roasted strawberries
  • 1/4 cup chocolate granola
  • small handful blueberries

Sweeteners & Flavorings

  • 2-3 tsp pure maple syrup (optional)
  • 1 tsp pure vanilla extract

Oats & Coconut

  • 5 cups rolled old-fashioned oats
  • 2 cups finely-shredded unsweetened coconut
  • 1/2 cup unsweetened cocoa powder
  • 1/2 tsp ground cinnamon
  • 1 tsp fine grain sea salt

Wet Ingredients

  • 3/4 cup unrefined coconut oil (melted)
  • 1/2 cup pure maple syrup
  • 1 tsp pure vanilla extract

Add-ins

  • 2 oz chocolate chips chunks (optional)

Dairy

  • 4 oz Greek yogurt

Instructions 

  • Preheat oven to 350°F (175°C). Toss strawberries with 2-3 tsp maple syrup and roast for 15-20 minutes.
  • Mix oats, shredded coconut, cocoa powder, cinnamon, and salt in a bowl. Add melted coconut oil, maple syrup, and vanilla; stir well.
  • Spread granola mixture on a baking sheet and bake at 350°F (175°C) for 15 minutes, stirring halfway.
  • Assemble bowls with Greek yogurt, roasted strawberries, chocolate granola, and blueberries. Drizzle with additional maple syrup if desired.

Notes

Store leftover granola in an airtight container for up to a week.
