A delicious fall-inspired dish featuring tender roasted honeynut squash drizzled with nutty brown butter and toasted pepitas.

honeynut squash, halved lengthwise, seeded, and quartered

olive oil
(to taste)

Sea salt and freshly cracked black pepper

Aleppo pepper

fresh thyme sprigs

salted butter

toasted pepitas

flaky salt
Instructions
Preheat oven to 425°F (220°C).
Halve and quarter the squash, toss with olive oil, season, and place on a baking sheet with thyme.
Roast for 20-25 minutes until tender.
Make brown butter by melting butter until golden and nutty, then set aside.
Drizzle squash with brown butter, sprinkle with pepitas and flaky salt, then serve immediately.
Notes
Watch the butter carefully to prevent burning.
