A delicious fall-inspired dish featuring tender roasted honeynut squash drizzled with nutty brown butter and toasted pepitas.

Ingredients

Main

  • 2 each honeynut squash, halved lengthwise, seeded, and quartered
  • 2-3 tsp olive oil (to taste)
  • to taste Sea salt and freshly cracked black pepper
  • to taste Aleppo pepper
  • 8 small sprigs fresh thyme sprigs
  • 2 tbsp salted butter
  • 1 tbsp toasted pepitas
  • to taste flaky salt

Instructions 

  • Preheat oven to 425°F (220°C).
  • Halve and quarter the squash, toss with olive oil, season, and place on a baking sheet with thyme.
  • Roast for 20-25 minutes until tender.
  • Make brown butter by melting butter until golden and nutty, then set aside.
  • Drizzle squash with brown butter, sprinkle with pepitas and flaky salt, then serve immediately.

Notes

Watch the butter carefully to prevent burning.
