Ingredients

Main

  • 1 whole chicken about 4-5 lbs
  • 2 tbsp olive oil or melted butter
  • 1 tbsp salt
  • 1 tsp black pepper
  • 1 tbsp garlic powder
  • 1 tbsp paprika
  • 1 tsp dried thyme
  • 1 lemon halved lemon
  • 4-5 cloves garlic cloves smashed

Optional

  • Fresh herbs like rosemary or thyme fresh herbs (optional)

Instructions 

  • Preheat oven to 425°F (220°C).
  • Rub the chicken with olive oil, salt, pepper, garlic powder, paprika, and thyme. Stuff lemon halves and smashed garlic cloves inside the cavity.
  • Place the chicken in a roasting pan and roast for about 90 minutes, until skin is crispy and juices run clear.
  • Let rest for 10 minutes before carving. Garnish with fresh herbs if desired.

Ensure the chicken reaches an internal temperature of 165°F (74°C) for safety.
