A delicious and nutritious dish featuring roasted butternut squash topped with creamy Greek yogurt and crunchy granola, perfect for a wholesome meal or snack.

Ingredients

Dried Fruit and Nuts

  • 1.5 cups Quaker Old Fashioned Oats
  • 0.5 cup unsalted mixed nuts (roughly chopped) ((walnuts, almonds, pecans))
  • 0.25 teaspoon salt
  • 0.5 teaspoon cinnamon
  • 3 tablespoons olive oil
  • 3 tablespoons honey
  • 0.5 teaspoon vanilla extract
  • 0.33 cup dried golden raisins
  • 1 medium butternut squash
  • 0.5 teaspoon salt
  • 3 cups plain nonfat Greek yogurt

Instructions 

  • Preheat oven to 350°F (175°C). Mix oats, nuts, salt, and cinnamon. Stir in oil, honey, vanilla. Spread on baking sheet and bake 20 mins, stirring halfway. Cool and crumble, then stir in dried fruit.
  • Increase oven temperature to 425°F (220°C). Prepare butternut squash by peeling, halving, and slicing into 1-inch rounds. Arrange on baking sheet, spray with oil, sprinkle with salt, and roast 35-40 mins, flipping halfway.
  • Serve roasted squash in bowls topped with ½ cup Greek yogurt and ½ cup granola.

Store granola in an airtight container for up to 2 weeks for best freshness.
