Instructions
Toss the butternut squash with olive oil, garlic, rosemary, sage, salt, and pepper.
Spread evenly on a baking sheet and roast at 400°F (200°C) for 40 minutes, until tender and caramelized.
In a small bowl, mix maple syrup, cinnamon, nutmeg, ginger, and cayenne (if using).
Drizzle the syrup mixture over the roasted squash and toss gently to coat.
Serve warm as a side dish or main.
