A delicious and hearty roasted butternut squash dish with aromatic herbs and spices, perfect as a side or main.

Ingredients

Main

  • 2 pounds butternut squash (cut in ½ inch slices or into ¾ inch dice)
  • 1.5 tablespoons extra virgin olive oil
  • 3 cloves garlic (minced)
  • 2 sprigs rosemary (fresh)
  • 5 leaves sage (fresh)
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1.5 tablespoons extra virgin olive oil (for coating)
  • 1 tablespoon maple syrup
  • 1 teaspoon cinnamon
  • 0.5 teaspoon salt
  • 1 sprig rosemary (additional)
  • 0.25 teaspoon grated nutmeg (optional)
  • 0.5 teaspoon ground ginger (optional)
  • 1 pinch cayenne pepper (optional)

Instructions 

  • Toss the butternut squash with olive oil, garlic, rosemary, sage, salt, and pepper.
  • Spread evenly on a baking sheet and roast at 400°F (200°C) for 40 minutes, until tender and caramelized.
  • In a small bowl, mix maple syrup, cinnamon, nutmeg, ginger, and cayenne (if using).
  • Drizzle the syrup mixture over the roasted squash and toss gently to coat.
  • Serve warm as a side dish or main.

Notes

For extra flavor, sprinkle with additional herbs or a squeeze of lemon before serving.
