Dough
1cupheavy cream
8tablespoonsbutter(divided, some melted for dough, some for glazing)
2cupsall-purpose flour
¼cupsugar
1tablespoonbaking powder
½teaspooncinnamon
½teaspoonsalt
1mediumGala or Fuji apple (diced)(about 1/4-inch pieces)
¾cupapple cider
1tablespoonbutter(for glaze)
3tablespoonssugar(for glaze)
½teaspooncinnamon(for glaze)
Instructions
Preheat oven to 400°F (200°C). Line a baking sheet with parchment.
Mix flour, baking powder, sugar, cinnamon, and salt. Add diced apples and stir. Combine heavy cream with melted butter, then add to dry ingredients and mix until just combined.
Scoop dough onto prepared sheet in 1/4-1/3 cup mounds. Brush with cider glaze, bake for 15 minutes, then brush again and bake 5 more minutes. Cool before serving.
Notes
For best results, use cold heavy cream and fresh apples.
