Delightful bars combining tart raspberry filling with creamy cheesecake and a buttery crumble crust, perfect for a sweet treat.

Ingredients

Filling

  • 12 oz frozen raspberries (or 3 cups, 340g)
  • 0.25 cup granulated sugar
  • 1 tbsp cornstarch
  • 2 tbsp water or lemon juice (for tartness)

Crust & Topping

  • 12 oz full fat cream cheese (room temp)
  • 0.33 cup granulated sugar
  • 1 tsp vanilla extract
  • 1 large egg
  • 0.5 cup light brown sugar (packed)
  • 0.5 cup granulated sugar
  • 2.75 cups all-purpose flour (or gluten-free flour, spooned and leveled)
  • 0.5 tsp kosher salt
  • 1 tsp baking powder
  • 1 cup unsalted butter (melted and cooled)

Instructions 

  • Prepare raspberry filling by combining raspberries, sugar, cornstarch, and water or lemon juice. Cook until thickened, then cool.
  • Mix cream cheese, sugars, vanilla, and egg until smooth. Combine with flour, salt, and baking powder to form the crust and crumble topping.
  • Press half of the crust mixture into a baking pan. Spread raspberry filling over the crust.
  • Sprinkle remaining crumble over the raspberry layer. Bake at 350°F (175°C) for 40 minutes until golden.
  • Allow to cool before slicing into bars. Serve and enjoy!

Notes

Chill the bars before serving for best texture.
