Ingredients

Protein

  • 16 oz extra firm tofu (sliced into strips)
  • 16 pieces rice paper wraps
  • 1 piece English cucumber (julienned)
  • 1 piece bell pepper (julienned)
  • 1-2 pieces carrots (julienned)
  • 1 cup purple cabbage (shredded)
  • 3-4 radishes radishes (thinly sliced)
  • 1 piece avocado (sliced (optional))
  • 1 handful fresh cilantro (chopped)
  • 0.75 cup Eden Foods Black Sesame Butter
  • 1 Tbsp Tamari Lite
  • 0.5 Tbsp maple syrup
  • 1 tsp chili garlic sauce
  • 1 Tbsp lime juice
  • 0.25 cup filtered water (to thin)

Instructions 

  • Preheat oven to 400°F (200°C). Bake tofu for 25-30 minutes until golden and firm.
  • Whisk together all sauce ingredients, adding water to achieve a thick but pourable consistency.
  • Soak rice paper in warm water for 10-15 seconds until pliable, then transfer to a plate.
  • Fill each rice paper with vegetables, baked tofu, avocado, and cilantro. Fold sides and roll tightly.
  • Repeat until all wraps are assembled. Serve with black sesame seeds and sauce.

Notes

Store leftovers separately and reassemble before serving for best freshness.
