A hearty and nutritious baked quinoa dish loaded with fresh vegetables and melted cheese, perfect for a wholesome meal.

Ingredients

Grains

  • 170 g quinoa (uncooked)
  • 500 g water
  • 2 tsp vegetable stock powder

Vegetables

  • 1 small broccoli head (chopped into florets)
  • 1 medium carrot (grated)
  • 1 medium zucchini (grated)
  • 1 red capsicum finely chopped
  • 150 g corn kernels

Dairy & Fats

  • 250 g cheese (grated)
  • 30 g butter
  • 250 g milk
  • 15 g plain flour

Seasoning

  • to taste salt and pepper

Instructions 

  • Cook quinoa in water with stock powder until tender, then drain.
  • Sauté vegetables until slightly softened.
  • Mix cooked quinoa with vegetables, cheese, and seasonings.
  • Prepare a béchamel sauce with butter, flour, and milk, then combine with quinoa mixture.
  • Transfer to a baking dish and bake at 180°C (350°F) for 20-25 minutes until golden.

You can customize the vegetables and cheese to your preference for added flavor.
