These savory muffins combine sausage, oats, and cheese for a quick, satisfying breakfast or snack.

Ingredients

Main ingredients

  • 2 tsp olive oil
  • 3/4 cup chopped red bell pepper
  • 6 oz diced cooked chicken sausage (such as aidell’s)
  • 1/3 cup sliced green onions, plus 2 tbsp reserved for garnish
  • 3/4 cup quick-cooking oats, gluten-free certified
  • 1 1/4 cups gluten-free all-purpose flour (1:1 baking blend recommended)
  • 1 tbsp baking powder
  • 1 tsp kosher salt
  • 1 1/2 tsp garlic powder
  • 3/4 tsp dried thyme
  • 3 oz grated cheddar cheese (about 1 heaping cup, reserve 2 tbsp for topping)
  • 2 large eggs
  • 1 cup milk (2% preferred)
  • 3 tbsp unsalted butter, melted

Instructions 

  • Preheat oven to 375°F (190°C). Grease muffin tin.
  • Mix all dry ingredients in a bowl.
  • In a separate bowl, whisk eggs, milk, melted butter, and cooked sausage.
  • Combine wet and dry ingredients, then fold in cheese and green onions.
  • Divide batter among muffin cups and bake for 20 minutes.

Store leftovers in an airtight container for up to 2 days.
