This easy overnight oats recipe combines creamy Greek yogurt, ripe bananas, and peanut butter for a nutritious and delicious breakfast.

Ingredients

Dairy

  • 0.25 cup plain Greek yogurt (adds protein and tanginess)
  • 1 tsp cinnamon (freshly ground preferred)
  • 0.75 cup almond milk (unsweetened preferred for less sugar)
  • 1 tsp vanilla extract (pure vanilla for best flavor)
  • 0.5 medium banana (sliced, adds natural sweetness and creaminess)
  • 2 tbsp peanut butter (creamy or chunky, Skippy used)
  • 1 tbsp honey (can use maple syrup as alternative)
  • 1 cup rolled oats (old-fashioned oats work best)
  • 1 tbsp chia seeds (optional but recommended for extra fiber)

Instructions 

  • Combine all ingredients in a jar or container and stir well.
  • Cover and refrigerate overnight or at least 4 hours.
  • Stir before serving and add toppings if desired.
