Ingredients

Meat

  • 1 lb ground beef lean preferred
  • 4 cups fresh spinach (stir in at the end)
  • 1 cup white or brown rice
  • 1 medium onion (diced)
  • 2 cloves garlic (minced)
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp paprika
  • 1 tsp dried oregano or Italian seasoning
  • 2 cups beef broth or stock (for cooking rice)
  • 1 tsp red pepper flakes (for added heat)
  • 0.5 cup grated Parmesan cheese (for topping)
  • 1 tbsp lemon zest or juice (for brightness)

Instructions 

  • Sauté diced onion and minced garlic in a large skillet until fragrant.
  • Add ground beef and cook until browned, then season with salt, pepper, paprika, oregano, and red pepper flakes.
  • Stir in rice and beef broth, bring to a boil, then reduce heat and simmer until rice is cooked and liquid is absorbed.
  • Stir in fresh spinach and cook until wilted, then remove from heat.
  • Top with grated Parmesan and lemon zest or juice before serving.

Notes

For a vegetarian version, substitute beef with lentils or mushrooms.
