Instructions
Preheat oven to 175°C (350°F) and line a muffin tin with paper liners or lightly grease.
Whisk cottage cheese, eggs, pumpkin puree, honey, and vanilla in a large bowl until smooth.
Mix oat flour, protein powder, baking powder, pumpkin pie spice, and salt in a separate bowl.
Gradually add dry ingredients to wet, stirring until just combined. Fold in optional add-ins.
Divide batter evenly among muffin cups, filling about 2/3 full. Bake for 20–25 minutes until a toothpick comes out clean.
Cool muffins in the pan briefly, then transfer to a wire rack to cool completely.
