Ingredients

Wet ingredients

  • 1 cup cottage cheese (full-fat or low-fat)
  • 2 large eggs
  • ½ cup pumpkin puree (not pie filling)
  • ¼ cup honey, maple syrup, or sweetener
  • 1 tsp vanilla extract

Dry ingredients

  • 1 ½ cups oat flour (or almond flour for gluten-free)
  • 1 scoop vanilla or unflavored protein powder
  • 1 tsp baking powder
  • 1 tsp pumpkin pie spice
  • Pinch salt
  • ¼ cup chocolate chips, chopped pecans, or dried cranberries (optional)

Instructions 

  • Preheat oven to 175°C (350°F) and line a muffin tin with paper liners or lightly grease.
  • Whisk cottage cheese, eggs, pumpkin puree, honey, and vanilla in a large bowl until smooth.
  • Mix oat flour, protein powder, baking powder, pumpkin pie spice, and salt in a separate bowl.
  • Gradually add dry ingredients to wet, stirring until just combined. Fold in optional add-ins.
  • Divide batter evenly among muffin cups, filling about 2/3 full. Bake for 20–25 minutes until a toothpick comes out clean.
  • Cool muffins in the pan briefly, then transfer to a wire rack to cool completely.

Notes

Store muffins in an airtight container for up to 3 days or freeze for longer storage.
