Dry Ingredients

gluten-free all purpose flour

Instructions
Preheat oven to 375°F (190°C). Lightly grease a cookie sheet.
Combine pumpkin, oil, sweetener, vanilla, and water in a bowl. Mix dry ingredients separately.
Add wet to dry ingredients, fold in pecans, then form 1-2 tbsp dough balls.
Roll balls in cinnamon sugar mixture, place on baking sheet, and bake for 8-10 minutes.
Cool for 3 minutes, then transfer to a rack to cool completely. Store in an airtight container.
Notes
To enhance flavor, toast pecans before adding to the batter.
