Ingredients

Dry ingredients

  • 1/2 cup all-purpose flour
  • 1/2 cup whole wheat pastry flour ((or all-purpose flour))
  • 2 teaspoons baking powder (aluminum-free recommended)
  • 1/2 teaspoon kosher salt
  • 2/3 cup granulated sugar
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves

Wet ingredients

  • 1/2 cup pumpkin puree
  • 1/4 cup milk (room temperature)
  • 1 tablespoon unsalted butter (melted and cooled)
  • 2 teaspoons vanilla extract
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar ((light or dark))
  • 1/4 teaspoon ground cinnamon
  • 1/3 cup chopped pecans

Water

  • 1 1/2 cups hot water

Instructions 

  • Preheat oven to 350°F (175°C). Grease a 2-quart casserole dish.
  • Mix dry ingredients: flour, baking powder, salt, sugars, spices, and cloves.
  • Combine pumpkin, milk, melted butter, and vanilla; add to dry ingredients and mix until just combined.
  • Pour batter into dish, top with sugar-cinnamon mixture and pecans, then pour hot water over top without stirring.
  • Bake for 40 minutes until set. Cool slightly before serving with optional ice cream or whipped cream.

Notes

For best results, use aluminum-free baking powder and fresh spices.
