Instructions
Preheat oven to 325°F (160°C). Line a baking sheet with parchment paper.
Mix oats, wheat germ, sugar, pepitas, salt, cinnamon, nutmeg, and ginger in a large bowl.
Whisk together pumpkin, oil, syrup, and vanilla; stir into dry mixture.
Spread mixture on baking sheet, add pecans, and bake for 35-40 minutes, stirring halfway.
Cool completely, then stir in dried cranberries before storing.
