A flavorful and crunchy pumpkin granola perfect for breakfast or snacking, made with wholesome ingredients and dried cranberries.

Ingredients

Dry ingredients

  • 3 cups old fashioned rolled oats
  • 1/2 cup wheat germ
  • 1/2 cup light brown sugar (lightly packed)
  • 1/2 cup raw pepitas (hulless pumpkin seeds)
  • 1/2 teaspoon kosher salt (Diamond Crystal)
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger

Wet ingredients

  • 1/2 cup pumpkin puree (not pumpkin pie mix)
  • 1/4 cup neutral flavored oil (such as grapeseed or canola)
  • 1/4 cup pure maple syrup (not pancake syrup)
  • 1 teaspoon pure vanilla extract

Add-ins

  • 1 cup halved raw pecans
  • 1 cup dried cranberries

Instructions 

  • Preheat oven to 325°F (160°C). Line a baking sheet with parchment paper.
  • Mix oats, wheat germ, sugar, pepitas, salt, cinnamon, nutmeg, and ginger in a large bowl.
  • Whisk together pumpkin, oil, syrup, and vanilla; stir into dry mixture.
  • Spread mixture on baking sheet, add pecans, and bake for 35-40 minutes, stirring halfway.
  • Cool completely, then stir in dried cranberries before storing.

Notes

Store in an airtight container for up to a week or freeze for longer storage.
