Ingredients
Dough
1cupcold water
2tbspapple cider vinegar
2cupplain gluten free flour blend
1/2cupcoconut flour
1tspxanthan gum
pinchsalt
1 3/4stickscold unsalted butter, cut into cubes
Filling
1smallpumpkin or butternut squash((peeled, deseeded, cut into chunks))
1tbspsunflower or vegetable oil
2mediumonions(thinly sliced)
1tbspolive oil
2.6ozcheddar cheese, grated
pinchnutmeg
a few sprigsthyme leaves
salt & pepperto taste
1eggwhisked (for egg wash)
Sprinkles
a mix ofsesame, sunflower, and pumpkin seeds(for sprinkling)
Instructions
Prepare the dough by mixing water, vinegar, flours, xanthan gum, salt, and butter until flaky.
Roast pumpkin until tender, then mash and set aside.
Sauté onions in oil until caramelised, then mix with mashed pumpkin, cheddar, nutmeg, thyme, salt, and pepper.
Roll out dough, cut into squares, fill with pumpkin mixture, fold, and seal edges. Brush with egg wash and sprinkle seeds on top.
Bake at 375°F (190°C) for 25-30 minutes until golden and flaky.
Notes
Chill the dough before rolling for best flaky layers.
