Delight in these flaky, gluten-free pastries filled with sweet caramelised onions, savory cheddar, and roasted pumpkin, perfect for a cozy meal or snack.

Ingredients

Dough

  • 1 cup cold water
  • 2 tbsp apple cider vinegar
  • 2 cup plain gluten free flour blend
  • 1/2 cup coconut flour
  • 1 tsp xanthan gum
  • pinch salt
  • 1 3/4 sticks cold unsalted butter, cut into cubes

Filling

  • 1 small pumpkin or butternut squash ((peeled, deseeded, cut into chunks))
  • 1 tbsp sunflower or vegetable oil
  • 2 medium onions (thinly sliced)
  • 1 tbsp olive oil
  • 2.6 oz cheddar cheese, grated
  • pinch nutmeg
  • a few sprigs thyme leaves
  • salt & pepper to taste
  • 1 egg whisked (for egg wash)

Sprinkles

  • a mix of sesame, sunflower, and pumpkin seeds (for sprinkling)

Instructions 

  • Prepare the dough by mixing water, vinegar, flours, xanthan gum, salt, and butter until flaky.
  • Roast pumpkin until tender, then mash and set aside.
  • Sauté onions in oil until caramelised, then mix with mashed pumpkin, cheddar, nutmeg, thyme, salt, and pepper.
  • Roll out dough, cut into squares, fill with pumpkin mixture, fold, and seal edges. Brush with egg wash and sprinkle seeds on top.
  • Bake at 375°F (190°C) for 25-30 minutes until golden and flaky.

Notes

Chill the dough before rolling for best flaky layers.
