Ingredients
Dough
1cupcold water
2tbspapple cider vinegar
2cupplain gluten free flour blend
1/2cupcoconut flour
1tspxanthan gum
pinchsalt
1 3/4stickscold unsalted butter, cut into cubes
1smallpumpkin or butternut squash, peeled, deseeded and cut into chunks
1tbspsunflower or vegetable oil
Filling
2mediumonions, thinly sliced
1tbspolive oil
2.6ozcheddar cheese, grated
pinchnutmeg
a few sprigsthyme, leaves only
salt & pepperto taste
1eggwhisked for egg wash
Seeds for sprinkling
mix of sesame, sunflower and pumpkin seedsfor sprinkling
Instructions
Mix cold water and vinegar, then chill in freezer.
Sift flours, xanthan gum, and salt. Cut in butter until crumbly.
Add ice water mixture gradually, mix, shape into rectangle, wrap, and refrigerate for 1 hour.
Roast pumpkin at 390°F (200°C) for 45-60 minutes, then cool.
Caramelize onions with olive oil for 10-15 minutes until soft and browned.
Mix roasted pumpkin, onions, cheddar, nutmeg, thyme, salt, and pepper. Roll out dough, cut into rectangles or squares, fill, seal, egg wash, sprinkle seeds, and bake at 355°F (180°C) for 40 minutes until golden.
Notes
Ensure the dough is chilled well for flaky pastries. Adjust seasoning to taste.
