Ingredients

Dough

  • 3/4 cup warm water (110F)
  • 2-1/4 teaspoons active dry yeast
  • 1/2 cup pumpkin puree
  • 2 tablespoons honey or agave nectar
  • 2 tablespoons vegetable oil
  • 2 teaspoons kosher salt
  • 3 to 3-1/2 cups bread flour (spooned and leveled)
  • 1 large egg white (mixed with 1 tablespoon water)
  • 1 tablespoon unsalted butter, softened

Instructions

  • Dissolve yeast in warm water and let stand 5 minutes until foamy.
  • Mix pumpkin, honey, and oil into yeast mixture. Add salt and 3 cups flour; mix until dough pulls away from sides. Add more flour if needed.
  • Knead dough until stretchy and elastic, about 10 minutes by hand or 5-7 minutes in a mixer.
  • Let dough rise in a greased bowl, covered, for 1-1.5 hours until doubled.
  • Divide dough into 12 portions, shape into balls, place in greased pan, and let rise 30-45 minutes.
  • Brush with egg wash, bake at 350F for 25-30 minutes until golden. Brush with butter and cool slightly before serving.

Notes

Ensure dough is not too wet; add flour as needed for best texture.
