A delicious and comforting pumpkin casserole perfect for fall gatherings or holiday dinners.

Ingredients

Pumpkin Puree

  • 2 cans pumpkin puree (about 3 ¾ cups)
  • 2 large eggs
  • ¼ cup salted butter (melted)
  • ¼ cup heavy cream (or milk)
  • cup white sugar (¾ if you like it a little sweeter)
  • 1 teaspoon vanilla extract
  • 2 teaspoons pumpkin pie spice (or homemade pumpkin pie spice)
  • ½ teaspoon cinnamon
  • ½ teaspoon salt
  • ¾ cup packed brown sugar
  • ½ cup all-purpose flour (or gluten-free baking mix)
  • 4-5 tablespoons salted butter (softened or grated)
  • 1 cup chopped pecans (or walnuts)

Instructions 

  • Preheat oven to 350ºF (177ºC) and grease a 9x13 inch baking dish.
  • Add pumpkin puree and ¼ cup melted butter to a large bowl; mix well.
  • Stir in heavy cream, sugar, vanilla, spices, and salt until combined.
  • Beat eggs separately, then add to mixture and stir until smooth.
  • Pour into prepared dish and smooth top. Bake for 45 minutes.

Notes

For a richer flavor, top with extra pecans before baking.
