Ingredients

Bread

  • 1 loaf stale brioche or challah bread (about 6 to 8 cups when cubed)
  • 1 15-ounce can 100% pumpkin puree
  • 1.5 cups whole milk
  • 1 cup heavy cream
  • 0.5 cup packed light brown sugar
  • 0.5 cup granulated sugar
  • 4 large eggs
  • 2 large egg yolks
  • 2 teaspoons vanilla extract
  • 2 teaspoons ground cinnamon
  • 0.5 teaspoon ground ginger
  • 0.5 teaspoon ground nutmeg
  • 0.25 teaspoon salt
  • caramel sauce, whipped cream or ice cream, for serving

Instructions 

  • Preheat oven to 350°F (175°C). Cube the bread and optionally toast for 20-30 minutes, then cool.
  • Whisk pumpkin, cream, milk, sugars, eggs, vanilla, spices, and salt until blended.
  • Place bread in baking dish, pour over egg mixture, and soak for 30 minutes or overnight.
  • Bake for 40-45 minutes until set and golden. Cool slightly before serving.
  • Serve warm with caramel sauce, whipped cream, or ice cream.

Notes

For best flavor, let the bread soak overnight.
