Protein Almond Butter Cups (Paleo)

A delicious paleo-friendly treat combining rich dark chocolate with creamy almond butter filling, perfect for a quick snack or dessert.

Ingredients

Chocolate and Coating

  • 1 1/3 cups dark chocolate chips (I used Pascha 85% dark)
  • 1/2 Tbsp coconut oil

Filling

  • 1/4 cup drippy almond butter (just dry roasted almonds)
  • 2 Tbsp maple syrup (optional)
  • 1 scoop Vanilla Protein Powder (25g)
  • to taste pinch Flaked Salt (optional topping)

Instructions 

  • Line a mini muffin pan with 15 paper liners.
  • Melt chocolate and coconut oil in microwave, stirring every 20-30 seconds.
  • Divide melted chocolate into liners, pushing up the sides.
  • Freeze until set, then add filling and cover with remaining chocolate.
  • Top with flaked salt if desired, then chill until firm.

Notes

Store in the fridge for up to one month.
