A delicious paleo-friendly treat combining rich dark chocolate with creamy almond butter filling, perfect for a quick snack or dessert.
Ingredients
Chocolate and Coating
1 1/3
cups
dark chocolate chips
(I used Pascha 85% dark)
1/2
Tbsp
coconut oil
Filling
1/4
cup
drippy almond butter
(just dry roasted almonds)

Tbsp
maple syrup
(optional)

scoop
Vanilla Protein Powder
(25g)
to taste
pinch
Flaked Salt
(optional topping)
Instructions
Line a mini muffin pan with 15 paper liners.
Melt chocolate and coconut oil in microwave, stirring every 20-30 seconds.
Divide melted chocolate into liners, pushing up the sides.
Freeze until set, then add filling and cover with remaining chocolate.
Top with flaked salt if desired, then chill until firm.
Notes
Store in the fridge for up to one month.
