Ingredients

Eggs

  • 3 pieces eggs (at room temperature, separated)

Buttermilk

  • 1.5 cups buttermilk (at room temperature)

Unsalted Butter

  • 0.5 cup unsalted butter (melted)

Vanilla Extract

  • 0.5 teaspoon vanilla extract

All-purpose Flour

  • 1.5 cups all-purpose flour

Granulated Sugar

  • 3 tablespoons granulated sugar

Ground Cinnamon

  • 1.5 teaspoons ground cinnamon

Baking Powder

  • 1.5 teaspoons baking powder

Baking Soda

  • 1 teaspoon baking soda

Kosher Salt

  • 0.25 teaspoon kosher salt

Dark Brown Sugar

  • 1 cup dark brown sugar

Unsalted Butter

  • 0.5 cup unsalted butter (softened, cut into cubes)

Maple Syrup

  • 0.5 cup maple syrup

Kosher Salt

  • 2 pinches kosher salt

Chopped Pecans

  • 1 cup coarsely chopped pecans

Instructions 

  • Preheat oven to 200°F and prepare waffle maker.
  • Whisk egg yolks with buttermilk, melted butter, and vanilla. Mix dry ingredients separately.
  • Combine wet and dry mixtures, then fold in beaten egg whites until just combined.
  • Cook waffles in the waffle maker, then keep warm in the oven.
  • Make praline syrup by heating brown sugar, butter, maple syrup, and salt; stir in pecans.
  • Serve waffles topped with praline syrup and pecans immediately.

Notes

For extra crunch, toast the pecans before adding to the syrup.
