A delicious and easy flatbread topped with pesto, shrimp, and fresh tomatoes, perfect for a quick meal or appetizer.

Ingredients

Base

  • 1 piece pre-made flatbread or naan bread
  • 8 ounces medium shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • Salt and black pepper to taste Salt and black pepper (to season shrimp)
  • 0.25 cup pesto sauce
  • 1 cup shredded mozzarella cheese
  • 0.25 cup cherry tomatoes, halved
  • 2 tablespoons grated Parmesan cheese (for topping)

Optional Garnish

  • to taste fresh basil leaves, red pepper flakes (for garnish)

Instructions 

  • Toss shrimp with olive oil, salt, and pepper.
  • Cook shrimp in a skillet over medium-high heat for 2-3 minutes per side until pink and opaque. Remove and set aside.
  • Spread pesto on flatbread, then sprinkle with mozzarella cheese.
  • Distribute cooked shrimp and cherry tomatoes over the cheese. Bake at 400°F (200°C) for 8-10 minutes until crust is golden and cheese melts.
  • Remove from oven, sprinkle Parmesan, red pepper flakes, and basil if desired. Slice and serve.

Notes

For extra flavor, add a squeeze of lemon over the shrimp before baking.
