Instructions
Whisk dry ingredients: flour, sugar, baking powder, salt, and cinnamon in a large bowl.
Whisk wet ingredients: egg yolks, buttermilk, oil, and vanilla in a medium bowl.
Beat egg whites until stiff peaks form, then fold into wet mixture.
Gently stir in seltzer, then combine wet and dry ingredients, folding in half the pecans.
Pour batter onto preheated waffle iron, sprinkle remaining pecans, and cook until golden and crisp, about 6-9 minutes.
