Ingredients

Mini Pitas

  • 4 pieces whole wheat mini pitas
  • 1/2 teaspoon oil (coconut oil recommended)
  • 1/4 cup whole milk ricotta cheese
  • 1/4 teaspoon lemon juice
  • 1/16 teaspoon ground cinnamon
  • 1 tablespoon raspberry preserves
  • 2 large peaches (pitted and thinly sliced)
  • 2 tablespoons fresh blueberries
  • 1 tablespoon sliced raw almonds

Instructions 

  • Preheat oven to 400°F (200°C). Lightly oil pitas and bake for 5-8 minutes until crispy. Cool for 3-4 minutes.
  • Mix ricotta, lemon juice, and cinnamon in a bowl.
  • Spread raspberry preserves on cooled pitas, then top with ricotta mixture.
  • Arrange peach slices over the ricotta, then sprinkle with blueberries and almonds.
