Ingredients

Protein

  • 2 cups cooked chicken shredded
  • 1 cup diced peaches fresh, ripe preferred
  • 0.5 cup pecans chopped, lightly toasted
  • 0.5 cup plain Greek yogurt
  • 1 tablespoon honey
  • 1 tablespoon lemon juice
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Lettuce

  • 8 large lettuce leaves Romaine or butter lettuce

Instructions 

  • Toast pecans in a dry skillet over medium heat for 3-5 minutes, then cool.
  • Whisk Greek yogurt, honey, lemon juice, salt, and black pepper until smooth.
  • Mix shredded chicken, peaches, and toasted pecans into the dressing.
  • Rinse and dry lettuce leaves. Spoon chicken salad onto each leaf and fold or serve open-faced.
  • Serve immediately for best freshness and crunch.

Notes

For extra flavor, lightly toast pecans before adding.
