Ingredients

Dry ingredients

  • 1 cup all-purpose flour or your favorite pancake mix
  • 1 tablespoon sugar or maple sugar
  • 1 teaspoon baking powder
  • 0.25 teaspoon baking soda
  • 0.25 teaspoon fine salt

Wet ingredients

  • 0.75 cup milk, plus a splash more if needed
  • 1 large egg, room temperature
  • 2 tablespoons melted butter or neutral oil
  • 1 teaspoon vanilla extract
  • 0.5 cup blueberries, mini chocolate chips, diced strawberries, or chopped nuts

Instructions 

  • Preheat oven to 350°F (175°C) and prepare a muffin tin.
  • Mix dry ingredients in a bowl.
  • Whisk wet ingredients separately, then combine with dry ingredients until just mixed.
  • Fold in berries or chocolate chips.
  • Spoon batter into muffin tin and bake for 15 minutes until golden.

Notes

For extra flavor, add a pinch of cinnamon or nutmeg to the dry ingredients.
