One-Pot Honey BBQ Chicken Mac and Cheese

A delicious and easy one-pot meal combining tender honey BBQ chicken with creamy cheese pasta for a satisfying dinner.

Ingredients

Protein

  • 1 lb diced chicken breast
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • Salt and pepper to taste Salt and pepper
  • 2 tbsp honey
  • ¼ cup sugar-free BBQ sauce or regular

Pasta

  • 2 cups elbow pasta or any pasta of your choice
  • 1 cup fat-free evaporated milk
  • 4 oz reduced-fat cream cheese
  • 1 tsp chicken stock powder
  • 1 ½ cups shredded light cheddar cheese

Instructions 

  • Coat chicken with olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper.
  • Cook chicken in a pan over medium heat for 4 minutes per side until cooked through. Drizzle honey and BBQ sauce over chicken and stir.
  • Cook pasta in salted boiling water until al dente, then drain and set aside.
  • In the same pan, add evaporated milk and cream cheese; stir until smooth. Add chicken stock powder and stir until combined.
  • Stir in shredded cheddar cheese until melted. Mix in cooked pasta and add honey BBQ chicken. Gently combine.

Notes

For extra flavor, garnish with fresh herbs like parsley or chives.
