Ingredients

Meat

  • 10 ounces smoked sausage (Andouille or kielbasa)

Pasta

  • 4 ounces pasta (penne or rigatoni)

Seasonings

  • 2 tablespoons Cajun seasoning
  • 1 tablespoon olive oil

Vegetables

  • 1 cup diced bell peppers (mixed colors)
  • 0.5 cup diced onion

Liquids

  • 2 cups low-sodium chicken broth ((add more if needed))
  • 1 cup heavy cream
  • 1 cup shredded Parmesan cheese

Spices

  • 0.5 teaspoon garlic powder
  • 0.25 teaspoon cayenne pepper (optional, for extra spice)

Greens

  • 1 cup fresh spinach (optional)

Garnish

Instructions 

  • Sauté sliced sausage and diced onions in olive oil until browned.
  • Add bell peppers and Cajun seasoning; cook for 2 minutes.

  • Stir in heavy cream, Parmesan, garlic powder, cayenne, and spinach; simmer until thickened.

Notes
