A quick and flavorful one-pan meal combining ground beef, rice, beans, and spices for a satisfying Tex-Mex dish.

Ingredients

Meat

  • 450 g lean ground beef

Grains

  • 185 g long-grain white rice, uncooked

Canned Goods

  • 425 g black beans, rinsed
  • 280 g diced tomatoes with green chilies

Broth

  • 480 ml beef broth

Cheese

  • 110 g shredded cheddar cheese

Spices

  • 1 tbsp taco seasoning

Fresh herbs

  • Fresh cilantro for garnish

Instructions 

  • Brown the ground beef in a large skillet over medium heat, then drain excess fat.
  • Stir in rice, black beans, diced tomatoes with chilies, beef broth, and taco seasoning.
  • Bring to a boil, reduce heat to low, cover, and simmer for 18-20 minutes until rice is tender.
  • Sprinkle with shredded cheese, cover for 1 minute to melt, then garnish with cilantro.

Notes

For extra flavor, add a squeeze of lime or chopped onions.
