Instructions
Heat oil in a large pan over medium-high heat.
Add garlic and cumin; cook for 1 minute.
Add beans, tomatoes, corn, quinoa, water, and salt; bring to a boil, cover, and simmer for 20 minutes.
Dice the avocado and chop cilantro.
Remove from heat, let rest for 5 minutes, then stir in cilantro and avocado. Serve with lime wedges.
