A flavorful and easy one-pan meal combining quinoa, black beans, corn, and fresh toppings for a vibrant Mexican-inspired dish.

Ingredients

Oil and spices

  • 1 tablespoon olive oil
  • 1 clove garlic, minced
  • 1/2 teaspoon cumin

Grains and liquids

  • 1 cup quinoa
  • 1 cup water (or vegetable broth)
  • 1 can black beans (drained and rinsed (15-ounce))
  • 1 can chopped tomatoes (15-ounce)
  • 1 cup corn (frozen, canned, or roasted)
  • 1 jalapeno sliced
  • a pinch to taste salt
  • 1 lime cut into wedges
  • 1 avocado diced

Fresh toppings

  • some chopped cilantro leaves chopped cilantro

Instructions 

  • Heat oil in a large pan over medium-high heat.
  • Add garlic and cumin; cook for 1 minute.
  • Add beans, tomatoes, corn, quinoa, water, and salt; bring to a boil, cover, and simmer for 20 minutes.
  • Dice the avocado and chop cilantro.
  • Remove from heat, let rest for 5 minutes, then stir in cilantro and avocado. Serve with lime wedges.
