Ingredients

Protein

  • 4 pieces boneless chicken thighs or breasts

Grains

  • 1 cup long-grain white rice

Fats & Oils

  • 2 tablespoons olive oil

Aromatics

  • 3 cloves garlic minced

Broth & Liquids

  • 2 cups chicken broth

Flavorings

  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest

Herbs & Spices

  • 1 teaspoon dried oregano
  • ½ teaspoon dried thyme
  • ½ teaspoon dried parsley
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Garnish

  • 2 tablespoons chopped fresh parsley

Instructions 

  • Season chicken with salt, pepper, and herbs.
  • Heat olive oil in a large pan and cook chicken until browned, then remove.
  • Add garlic to the pan and sauté briefly, then add rice and cook for 2 minutes.
  • Pour in chicken broth, lemon juice, lemon zest, and return chicken to the pan. Cover and simmer for 20 minutes.
  • Fluff rice, garnish with chopped parsley, and serve.

Notes

Use fresh herbs if available for extra flavor.
