Instructions
Heat oil in a skillet; cook beef until browned, 5–7 minutes.
Push beef aside; cook onion and peppers until softened, 4–5 minutes; add garlic and cook 30 seconds.
Stir in herbs, tomatoes, and broth; simmer 5–7 minutes until thickened. Season with salt and pepper.
If using cheese, sprinkle on top and cover to melt, 1–2 minutes. Serve on rolls or over pasta.
