A delicious and easy one-pan dish combining tender chicken, flavorful rice, and a sweet and tangy honey mustard sauce.

Ingredients

Broth & Sauces

  • 2 cups chicken broth (Swanson preferred)
  • 4 tbsp dijon mustard (Grey Poupon preferred)
  • 4 tbsp honey
  • 2 tsp garlic powder
  • 1/2 tsp smoked paprika

Main Protein & Rice

  • 4 chicken breasts chicken breasts (pounded to an even 1-inch thickness)
  • 1 cup long grain white rice
  • 1/2 tsp dried thyme
  • 3/4 tsp salt
  • 1/2 tsp black pepper

Instructions 

  • Preheat oven to 375°F (190°C). Season chicken breasts with salt, pepper, garlic powder, and smoked paprika.
  • In a large ovenproof skillet, combine chicken broth, dijon mustard, honey, and thyme. Bring to a simmer.
  • Add rice to the skillet, stirring to coat. Place chicken breasts on top of the rice mixture.
  • Cover and bake for 35-40 minutes until chicken is cooked through and rice is tender.
  • Remove from oven, let rest for 5 minutes, then serve hot.

Notes

For extra flavor, garnish with fresh herbs or a squeeze of lemon before serving.
