A quick and flavorful one-pan meal combining tender chicken, rice, and vegetables in a sweet and smoky BBQ honey sauce.

Ingredients

Protein

  • 1 lb boneless, skinless chicken thighs or breasts

Grains

  • 1 cup long-grain rice

Broth & Sauces

  • 2 cups chicken broth
  • 1/2 cup BBQ sauce
  • 1/4 cup honey

Vegetables

  • 1 cup mixed vegetables (frozen or fresh)

Spices & Seasonings

  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp smoked paprika
  • to taste Salt and pepper

Instructions 

  • Season chicken with garlic powder, onion powder, smoked paprika, salt, and pepper.
  • Heat oil in a skillet, sear chicken 5 mins per side until browned.
  • Mix BBQ sauce and honey; pour over chicken.
  • Add rice and broth, stir gently, then simmer covered for 20 mins.
  • In the last 5 mins, sprinkle vegetables on top, then cover and cook.
  • Let sit 5 mins, fluff rice, and serve.

Notes

Use fresh or frozen vegetables as preferred for added convenience.
