These moist and flavorful cookies combine hearty oats with sweet butternut squash, topped with a simple maple icing for a delightful treat.

Ingredients

dry ingredients

  • 2 cups all-purpose flour
  • 1 1/3 cups old fashioned rolled oats
  • 1 1/4 teaspoons baking powder
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground ginger
  • 1 teaspoon kosher salt

wet ingredients

  • 2 sticks unsalted butter, softened
  • 1 cup packed dark brown sugar
  • 1 cup sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups Butternut Squash Puree
  • 1 1/4 cups powdered sugar
  • 2 tablespoons milk (more as needed)
  • 1 tablespoon maple syrup
  • small pinch salt (for icing)

Instructions 

  • Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  • Mix dry ingredients in a bowl; set aside.
  • Cream butter and sugars; add egg and vanilla, then combine with dry ingredients and butternut squash.
  • Scoop dough onto baking sheets and bake for 10-12 minutes until edges brown.
  • Cool cookies, then whisk powdered sugar, milk, maple syrup, and salt for icing. Drizzle over cookies and dry.

Notes

For best results, use fresh butternut squash puree and measure ingredients accurately.
