Delight in these easy, no-bake bars with a crunchy coconut and cashew base topped with a creamy coconut cashew layer, perfect for a tropical treat.

Ingredients

Base mixture

  • 1 cup Medjool dates, pitted
  • 1 cup raw cashews, soaked for 4 hours
  • 1 cup unsweetened shredded coconut
  • 1/2 cup rolled oats

Cashew cream layer

  • 1 cup soaked cashews (drained)
  • 1/2 cup coconut milk
  • 2 tbsp maple syrup
  • 1 tsp vanilla extract
  • a pinch sea salt

Instructions 

  • Blend dates, soaked cashews, coconut, and oats until sticky and crumbly. Press into a lined dish to form the base.
  • Drain cashews and blend with coconut milk, maple syrup, vanilla, and salt until smooth. Pour over the base and spread evenly.
  • Refrigerate for 2-4 hours until set. Slice into bars and serve.

Notes

Store in an airtight container in the fridge for up to one week or freeze for up to three months.
