Delight in these easy, no-bake bars with a crunchy coconut and cashew base topped with a creamy coconut cashew layer, perfect for a tropical treat.
Ingredients
Base mixture

cup
Medjool dates, pitted
1
cup
raw cashews, soaked for 4 hours
1
cup
unsweetened shredded coconut
1/2
cup
rolled oats
Cashew cream layer
1
cup
soaked cashews
(drained)
1/2
cup
coconut milk
2
tbsp
maple syrup
1
tsp
vanilla extract
a pinch
sea salt
Instructions
Blend dates, soaked cashews, coconut, and oats until sticky and crumbly. Press into a lined dish to form the base.
Drain cashews and blend with coconut milk, maple syrup, vanilla, and salt until smooth. Pour over the base and spread evenly.
Refrigerate for 2-4 hours until set. Slice into bars and serve.
Notes
Store in an airtight container in the fridge for up to one week or freeze for up to three months.
