Start your day with these delicious, no-bake blueberry muffin breakfast bars packed with wholesome ingredients and natural sweetness.

Ingredients

Dates

  • 1 cup dates

Nut Butters

  • 1/4 cup almond butter (plus 2 tablespoons)
  • 2 tablespoons almond butter
  • 2 tablespoons maple syrup
  • 1.5 tablespoons coconut oil, melted

Dry Ingredients

  • 1/2 cup instant oats, ground into flour
  • 1/2 cup unflavored protein powder ((collagen peptides))
  • 1-2 teaspoons water

Add-ins

  • 1/4 cup Blue Diamond Whole Natural Almonds, chopped (roughly chopped)
  • 1/2 cup dried blueberries
  • 1/4 cup white chocolate, melted (optional)

Instructions 

  • Pulse dates in a food processor until smooth. Add almond butter, maple syrup, and coconut oil; pulse to combine.
  • Transfer to a bowl, add oats, protein powder, and water; mix well. Fold in almonds and blueberries.
  • Press mixture into a parchment-lined 8x8 inch pan. Chill for at least 30 minutes.
  • Slice into 8 bars. Drizzle with melted white chocolate, if desired.

Store in the fridge for up to 1 week.
