Ingredients

Dry ingredients

  • 2.25 cups flour (King Arthur all-purpose flour)
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 0.75 tsp cinnamon
  • 0.5 tsp salt

Wet ingredients

  • 0.5 cup butter (melted and cooled to room temperature)
  • 0.6 cup sugar
  • 0.25 cup brown sugar
  • 1 egg egg (room temperature, about 70°F)
  • 2 tsp vanilla
  • 3 tbsp vanilla yogurt (Stonyfield organic)
  • 2 bananas mashed until smooth with no large lumps
  • 1 cup strawberries (hulled and diced into 1/4-inch pieces)

Instructions 

  • Preheat oven to 375°F (190°C) and line a muffin tin with paper liners.
  • Mix dry ingredients in a bowl: flour, baking powder, baking soda, cinnamon, and salt.
  • In a separate bowl, whisk together melted butter, sugars, egg, vanilla, and yogurt.
  • Combine wet and dry ingredients, then fold in mashed bananas and diced strawberries.
  • Divide batter evenly into muffin cups and bake for 20 minutes or until golden brown.

Notes

For extra moisture, use full-fat yogurt and ripe bananas.
