A rich and moist vanilla almond cake perfect for any celebration, with a luscious frosting and chocolate accents.

Ingredients

Dry Ingredients

  • 2 cups All-Purpose Flour (Gold Medal)
  • 2 tablespoons Instant Clearjel or Vanilla Instant Pudding Mix
  • 1.5 teaspoons Baking Powder
  • 1 teaspoon Baking Soda
  • 0.75 teaspoon Salt
  • 0.75 cup Buttermilk
  • 0.25 cup Water
  • 1.5 teaspoons Vanilla Extract
  • 1 tablespoon Almond Extract
  • 1.5 teaspoons Apple Cider Vinegar

Wet Ingredients

  • 1 cup Sugar
  • 1 stick Salted Butter (at room temperature)
  • 0.25 cup Vegetable Oil
  • 0.25 cup Light Corn Syrup
  • 1 large Egg
  • 0.25 teaspoon Cream of Tartar

Frosting & Filling

  • 4 ounces Cream Cheese
  • 1.5 sticks Salted Butter (at room temperature)
  • 48 grams Shortening
  • 455 grams Powdered Sugar
  • 1 tablespoon Instant Clearjel (optional, for thicker frosting)
  • 1 tablespoon Pure Vanilla Extract
  • 0.25 teaspoon Almond Extract (optional)
  • 42 grams White Chocolate Chips
  • 42 grams Bright White or Super White Candy Melts
  • 2 tablespoons Heavy Cream

Instructions 

  • Preheat oven to 350°F (175°C). Mix dry ingredients and wet ingredients separately, then combine.
  • Pour batter into prepared pans and bake for 40 minutes or until a toothpick comes out clean.
  • Let cakes cool completely before frosting.
  • Prepare frosting by beating cream cheese, butter, shortening, and powdered sugar; add vanilla and optional almond extract.
  • Decorate with white chocolate chips and candy melts as desired.

Notes

For a thicker frosting, add instant Clearjel; can be omitted for a lighter texture.
