Delight in these moist and flavorful mini banana bread loaves, perfect for a quick snack or breakfast treat.

Ingredients

Butter and Sugar

  • 125 g unsalted butter, softened
  • 150 g light brown sugar

Eggs and Vanilla

  • 2 large large eggs
  • 1 tsp vanilla extract

Bananas

  • 3 ripe bananas ripe bananas, mashed

Dry Ingredients

  • 190 g self-raising flour
  • 1.5 tsp baking soda
  • 0.5 tsp salt
  • 1 tsp ground cinnamon

Wet Ingredients

  • 50 ml whole milk

Optional Add-ins

  • 60 g chopped walnuts or dark chocolate chips (optional)

Instructions 

  • Preheat oven to 170°C (340°F) and prepare 6 mini loaf tins.
  • Cream butter and sugar until pale. Add eggs one at a time, then vanilla.
  • Fold in mashed bananas. Sift dry ingredients and gradually add to wet mixture, alternating with milk. Fold in optional nuts or chocolate.
  • Divide batter among tins, filling about 3/4 full. Bake for 25-30 minutes until a toothpick comes out clean.
  • Cool in tins for 10 minutes, then transfer to wire rack to cool completely.

Notes

For extra flavor, add a handful of chopped walnuts or chocolate chips to the batter.
