Enjoy these flavorful vegan wraps filled with protein-rich quinoa, black beans, and colorful vegetables, topped with BBQ sauce and optional guacamole.

Ingredients

Grains

  • 1 cup quinoa, uncooked

Legumes

  • 15 oz black beans

Vegetables

  • 7 oz corn
  • 1 unit onion, chopped
  • 1 unit chili, chopped, seeds removed (optional)
  • 1 unit red pepper, diced

Condiments & Spices

  • to taste salt, pepper

Sauces & Toppings

  • as needed BBQ sauce
  • as needed guacamole, vegan sour creme (optional)

Wraps

  • 4 unit wraps (gf)

Instructions 

  • Cook the quinoa according to package instructions.
  • Chop onion, chili, and red pepper. Sauté onion, chili, and red pepper in a pan with oil for 5 minutes.
  • Fill each wrap with cooked quinoa, sautéed vegetables, corn, and black beans. Add guacamole, sour creme, and BBQ sauce as desired. Roll up and serve.
